The Halifax Donair-
My grandmother is from Halifax. There is a famous sandwich there, adapted from others but unique to its place. The name is obviously adapted from Doner, as in kebab, But Greek immigrants started selling gyros in Halifax and they were going broke. Eventually, they changed the recipe, changing from lamb and pork to beef and a new tradition was born. Lebanese flatbread, and inventing the distinctive sweet donair sauce made with condensed milk, vinegar, sugar, and garlic. He called it by the doner name rather than gyros, but it came to be pronounced, and spelled, as donair, this dish has now expanded all across Canada.
