This is a great salad in these crazy days of Coronavirus lockdown when we can't get to the gym- The least we can do is eat healthy! Enjoy.
Fattoush Salad Spiced Arabic Croutons
For the Arabic Croutons:
Arabic bread 1.5 cm Dice 1.5 Medium Pieces
white or brown
Olive Oil 200 Ml
Sumac Spice
Cayenne Pepper
Salt
Method:
In a medium sized sauté pan preheat olive oil
until almost smoking/
Quickly add Arabic Bread and sauté constantly
over medium heat until golden brown.
Toss with Sumac Salt and good pinch chili
pepper.
Drain in colander and immediately put on tissue
to remove extra oil.
After cooled keep in sealed airtight container
for up to 4 days. Freshly made same day
is best for these though.
Salad Basic Ingredients:
1 Head Baby Romaine Lettuce or 8 Piece Baby Gem
Lettuce (Larger leaves diced 1.5 CM small leaves whole
120 g Small Lebanese Cucumbers Japanese Roll
cut (English Cucumbers can be used)
200 g Large Vine Ripe Tomatoes 1.5 cm dice
seeds in. (Most be perfectly ripe and
sweet)
½ Red Onion Julienne
3 Tbsp Fresh Oregano Leaves
2 Tbsp Fresh Mint Julienne
1 Tablespoon Chopped Flat leaf Parsley
1 Handful Coriander Leaves lightly chopped
50 ml pomegranate molasses
½ Cup fresh ripe Pomegranate Seeds (Reserve
Half for top garnish)
Large Handful Arabic Croutons
Top Garnish:
Reserved fresh ripe Pomegranate Seeds
Whole Mint, Oregano, Parsley Leaves and Coriander
for Garnish
4 pc medium sized Thinly Sliced Red Garden
Radishes for Garnish
Dressing:
50 ml Extra Virgin Olive Oil
50 ml Juice of Freshly Squeezed Lemon
1 Clove Garlic Crushed
1 tbsp. Sumac Powder
Sea Salt
Freshly Ground Pepper
Method:
Mix and let smashed Garlic clove infuse for 30
minutes under refrigeration. Remove Garlic clove before mixing with salad.
Assembly:
1.
In a large
salad bowl mix together all basic salad ingredients.
2.
Toss with
dressing. Check Seasoning and Taste. Add Sea Salt and freshly ground pepper to
taste.
3.
Portion
into 4 medium sized Salad bowls.
4.
Garnish on
top with reserved Pomegranate, whole herbs and a few more croutons
5.
Drizzle
with a little more Pomegranate Molasses
Serve immediately.
